Tomato Soup

Tis the season for SOUP! It's freezing outside in MN and all we want to do is cozy up with a bowl of soup to warm up! This tomato soup recipe is not only great for the family but warms up the house at the same time with it using the oven and the stove top. Time to warm up those sweet souls!

INGREDIENTS:

  • 15-20 medium sized tomato (your choice)
  • 1 medium yellow onion
  • 1Tbsp minced garlic
  • 6 cups broth
  • 1 bay leaf
  • 1Tbsp thyme
  • salt and pepper to taste
  • avocado oil

 

INSTRUCTIONS:

  1. Pre heat oven to 375°
  2. Slice the clean tomatoes in half
  3. Place all tomatoes on a sheet pan
  4. Cover tomatoes in avocado oil (better with heat), pepper, and salt
  5. Place into the oven for 45 minutes
  6. Turn burner on medium heat and pour avocado oil in a large pot
  7. Sauté the onion for 5 minutes
  8. Add minced garlic for 3 more minutes
  9. Sprinkle the thyme, pepper, and salt
  10. Add cooked tomatoes, broth, and bay leaf
  11. Cover and simmer for 45 minutes
  12. Remove the bay leaf and use a hand stick or blender to puree the tomato soup
  13. Serve with your favorite grilled cheese!
