Split Pea Soup

INGREDIENTS:

  • 1 onion diced
  • 3 stalks celery diced
  • 3 carrots sliced
  • 1 Tbsp garlic minced 
  • 6 cups bone broth
  • 2 cups water
  • 1 ham bone
  • 1 bay leaf
  • 4 cups ham diced
  • salt, pepper, thyme

INSTRUCTIONS:

  1. Heat Dutch Oven on medium heat with a few teaspoons of avocado oil
  2. Sauté onion, celery, and carrots for 5 minutes
  3. Add garlic and spices and let sauté for 2 more minutes
  4. Pour broth, water, ham bone, bay leaf, ham and split peas into the pot
  5. Bring to a simmer
  6. Cover and let simmer for 40 minutes
  7. Remove bay leaf and ham bone
  8. Serve
