Immune Boosting Turkey Meatball Soup

INGREDIENTS:

  • 2 tablespoons Ghee (or oil of your choice)
  • 1 medium Zucchini diced
  • 2 carrots peeled & diced 
  • 2 stalks celery diced
  • 1 onion diced
  • 10oz mushrooms sliced
  • 1/2 head cauliflower chopped
  • 1 yellow bell pepper diced
  • 2 tablespoons tomato paste 
  • 2 quarts organic broth 
  • 1lb ground turkey
  • 3 cloves garlic minced
  • 1/3 cup almond flour
  • 2-3 tablespoons water
  • 1 tablespoon thyme
  • 1 tablespoon salt
  • 1 tablespoon pepper

Immune Boosting Turkey Meatball Soup is just what the doctor ordered! Loaded with healing veggies, broth, and homemade meatballs. These are the easiest meatballs to make in the history of meatballs so DON'T look away now thinking it'll take too long! I have this soup simmering for hours OR I can have it ready to eat start to finish in less than 90 minutes! The flavors are out of this world and only get stronger on day two or three!

INSTRUCTIONS:

  1. Dice and chop all your veggies
  2. Turn burner on a medium heat and add your ghee
  3. Once pan is hot add all your veggies
  4. Allow them to cook down for 20 minutes
  5. Add minced garlic
  6. Salt and pepper to taste
  7. Stir in tomato paste and let it cook down for 5 more minutes
  8. Pour broth into the pot
  9. Cover and let simmer for 30 minutes
  10. Place burner on low
  11. Blend the soup into the consistency of your liking (optional)
  12. Drop the meatballs into the soup and cover for 15 minutes
  13. ENJOY!

MEATBALL RECIPE:

  1. Combine almond flour and water into a bowl (make sure it's in between a paste and smooth consistency)
  2. Set aside for 5 minutes
  3. Add ground turkey, thyme, salt, and pepper
  4. Mix everything together
  5. Roll mixture into mini meatballs
