Egg Salad Sandwich Filling



  • 12 Hard Boiled Eggs
  • 6-8 Tablespoons of Mayo
  • 3-4 Teaspoons of Dijon Mustard
  • 4-6 Tablespoons of Finely Chopped Pickles
  • Salt and Pepper to Taste
  • 2 Green Onions for garnish (optional)


  1. Hard boil the dozen eggs
  2. Once the eggs are hard boiled, place them directly under cold water for 2-3 minutes
  3. Begin to peal the shell off the all the eggs
  4. Slice each egg in half and scoop out the yokes and place yokes into a bowl
  5. Roughly chop the egg whites and place into a separate bowl
  6. Take a fork and smash the egg yokes into a small crumble mixture
  7. Fold in mayo, dijon mustard, and pickles into the egg yokes
  8. Once yoke mixture is fully combined add it to the egg whites then salt and pepper to taste
  9. Optional: garnish with green onions
