Creamy Cucumbers

INGREDIENTS:

  • 2 cucumbers, sliced
  • 1/2 red onion, sliced
  • 3 tsp dill
  • 2 tsp salt
  • 2 tsp pepper
  • 2 cloves garlic, minced
  • 1 cup mayo (I used Primal Kitchen)
  • 3 tbsp organic distilled white vinegar

INSTRUCTIONS:

  • Slice the cucumbers and place into a large bowl.
  • Sprinkle salt over the cucumbers and set aside of 45 minutes.
  • Slice the red onion.
  • Drain extra liquid.
  • Add red onion, pepper, garlic, dill, mayo, and vinegar to the cucumber bowl.
  • Mix well.
  • Place into the fridge for a minimum 1 hour before eating.
