Chicken & Rice Soup

  • avocado oil
  • 1 onion- diced
  • 3 medium carrots- peeled and sliced
  • 3 stalks of celery- diced
  • 4 cloves garlic- minced
  • 8 cups of chicken broth  Or homemade broth!
  • 2 cups chicken- diced
  • 1/2 cup uncooked rice
  • 1 lemon- juiced
  • parsley- optional


  1. Add some avocado oil to your Dutch Oven and place on the burner on medium/low heat
  2. Add onion, carrots, and celery and sauté for 5 minutes
  3. Add garlic and sauté for 1 more minute
  4. Season with salt, pepper, thyme and red pepper flakes to your liking
  5. Pour in broth and bring to a boil
  6. Lower the pot to a simmer
  7. Stir in the rice and chicken
  8. Simmer for 20-25 minutes
  9. Add juice from the lemon and few more cracks of salt and pepper
  10. Serve hot with a side of yummy sourdough bread
