Chicken & Rice Soup

INGREDIENTS:
- avocado oil
- 1 onion- diced
- 3 medium carrots- peeled and sliced
- 3 stalks of celery- diced
- 4 cloves garlic- minced
- 8 cups of chicken broth Or homemade broth!
- 2 cups chicken- diced
- 1/2 cup uncooked rice
- 1 lemon- juiced
- parsley- optional
INSTRUCTIONS:
- Add some avocado oil to your Dutch Oven and place on the burner on medium/low heat
- Add onion, carrots, and celery and sauté for 5 minutes
- Add garlic and sauté for 1 more minute
- Season with salt, pepper, thyme and red pepper flakes to your liking
- Pour in broth and bring to a boil
- Lower the pot to a simmer
- Stir in the rice and chicken
- Simmer for 20-25 minutes
- Add juice from the lemon and few more cracks of salt and pepper
- Serve hot with a side of yummy sourdough bread
