Cauliflower Cheese Mac&Cheese

INGREDIENTS:

  • 1/2 head cauliflower
  • 1 cup cashews
  • 1 cup cheddar cheese
  • 1 cup parmesan cheese
  • 12 oz noodles (I used chickpea pasta)
  • 2 tbsp olive oil
  • 1 tsp minced garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp red pepper flakes

INSTRUCTIONS:

  1. Preheat oven to 350 degrees.
  2. Bring 2 pots of water to a boil.
  3. Chop cauliflower into 2 inch pieces.
  4. Once water is brought to a boil add both cauliflower and cashews into the same pot, boil till tender, about 8-10 minutes.
  5. In the second pot, add your pasta of choice.
  6. When cauliflower and cashews are done, drain and remember to save 1 cup of cooking liquid.
  7. Place cauliflower, cashews, olive oil, 1/2 cup of cooking liquid, garlic, half of both cheeses, and seasonings into a blender and blend for 1 minute. If you need to add the additional 1/2 cup of cooking liquid please do so accordingly.
  8. Grab a 8X8 pan and place cooked pasta and blended cauliflower cheese sauce into the pan and mix to have an even consistency.
  9. Top with the remaining cheese.
  10. Cover with tin foil and place into the oven for 30 minutes.
