INGREDIENTS:
- 1/2 head cauliflower
- 1 cup cashews
- 1 cup cheddar cheese
- 1 cup parmesan cheese
- 12 oz noodles (I used chickpea pasta)
- 2 tbsp olive oil
- 1 tsp minced garlic
- 1 tsp salt
- 1 tsp pepper
- 1 tsp red pepper flakes
INSTRUCTIONS:
- Preheat oven to 350 degrees.
- Bring 2 pots of water to a boil.
- Chop cauliflower into 2 inch pieces.
- Once water is brought to a boil add both cauliflower and cashews into the same pot, boil till tender, about 8-10 minutes.
- In the second pot, add your pasta of choice.
- When cauliflower and cashews are done, drain and remember to save 1 cup of cooking liquid.
- Place cauliflower, cashews, olive oil, 1/2 cup of cooking liquid, garlic, half of both cheeses, and seasonings into a blender and blend for 1 minute. If you need to add the additional 1/2 cup of cooking liquid please do so accordingly.
- Grab a 8X8 pan and place cooked pasta and blended cauliflower cheese sauce into the pan and mix to have an even consistency.
- Top with the remaining cheese.
- Cover with tin foil and place into the oven for 30 minutes.
