Zucchini Muffins

Ingredients

  • 1 1/2 cups grated zucchini
  • 1 cup organic cane sugar
  • 1/4 cup swerve brown sugar
  • 1/2 cup applesauce
  • 1/3 avocado oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups organic unbleached flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon

Instructions

  • Preheat Oven to 350 degrees.
  • Grab a large bowl at add grated zucchini, organic cane sugar, swerve brown sugar, applesauce, avocado oil, eggs, and vanilla extract.
  • Stir until fully combined.
  • Add flour.
  • Stir until fully combined.
  • Add the salt, baking powder, baking soda, and cinnamon.
  • Stir until fully combined one final time.
  • Place the batter into muffin tins.
  • Place into the oven for 50 minutes or until a toothpick comes out completely clean.
