Split Pea Soup

Ingredients
- 1 onion diced
- 3 stalks celery diced
- 3 carrots sliced
- 1 Tbsp garlic minced
- 6 cups bone broth
- 2 cups water
- 1 ham bone
- 1 bay leaf
- 4 cups ham diced
- salt, pepper, thyme
Instructions
- Heat Dutch Oven on medium heat with a few teaspoons of avocado oil
- Sauté onion, celery, and carrots for 5 minutes
- Add garlic and spices and let sauté for 2 more minutes
- Pour broth, water, ham bone, bay leaf, ham and split peas into the pot
- Bring to a simmer
- Cover and let simmer for 40 minutes
- Remove bay leaf and ham bone
- Serve
