Split Pea Soup

Ingredients

  • 1 onion diced
  • 3 stalks celery diced
  • 3 carrots sliced
  • 1 Tbsp garlic minced
  • 6 cups bone broth
  • 2 cups water
  • 1 ham bone
  • 1 bay leaf
  • 4 cups ham diced
  • salt, pepper, thyme

Instructions

  • Heat Dutch Oven on medium heat with a few teaspoons of avocado oil
  • Sauté onion, celery, and carrots for 5 minutes
  • Add garlic and spices and let sauté for 2 more minutes
  • Pour broth, water, ham bone, bay leaf, ham and split peas into the pot
  • Bring to a simmer
  • Cover and let simmer for 40 minutes
  • Remove bay leaf and ham bone
  • Serve
