Egg Salad Sandwich Filling

This classic Egg Salad recipe is a creamy, flavorful blend perfect for sandwiches or as a light meal. Ingredients

  • 12 Hard Boiled Eggs
  • 6-8 Tablespoons of Mayo
  • 3-4 Teaspoons of Dijon Mustard
  • 4-6 Tablespoons of Finely Chopped Pickles
  • Salt and Pepper to Taste
  • 2 Green Onions for garnish (optional)

Instructions

  • Hard boil the dozen eggs
  • Once the eggs are hard boiled, place them directly under cold water for 2-3 minutes
  • Begin to peal the shell off the all the eggs
  • Slice each egg in half and scoop out the yokes and place yokes into a bowl
  • Roughly chop the egg whites and place into a separate bowl
  • Take a fork and smash the egg yokes into a small crumble mixture
  • Fold in mayo, dijon mustard, and pickles into the egg yokes
  • Once yoke mixture is fully combined add it to the egg whites then salt and pepper to taste
  • Optional: garnish with green onions
