Creamy Cucumbers
This Creamy Cucumbers recipe is a refreshing and tangy side dish that’s perfect for warm days or as an accompaniment to main meals. Crisp cucumber slices and red onion are tossed with a blend of dill, garlic, and a creamy dressing made from mayo and white vinegar for a touch of tanginess. Ingredients
- 2 cucumbers, sliced
- 1/2 red onion, sliced
- 3 tsp dill
- 2 tsp salt
- 2 tsp pepper
- 2 cloves garlic, minced
- 1 cup mayo (I used Primal Kitchen)
- 3 tbsp organic distilled white vinegar
Instructions
- Slice the cucumbers and place into a large bowl.
- Sprinkle salt over the cucumbers and set aside of 45 minutes.
- Season chicken on both sides with salt and pepper.
- Slice the red onion.
- Drain extra liquid.
- Add red onion, pepper, garlic, dill, mayo, and vinegar to the cucumber bowl.
- Place into the fridge for a minimum 1 hour before eating.
