Chicken & Rice Soup

This Chicken & Rice Soup is a comforting, hearty dish perfect for warming up on a chilly day. Ingredients

  • avocado oil
  • 1 onion diced
  • 3 medium carrots peeled and sliced
  • 3 stalks of celery diced
  • 4 cloves garlic minced
  • 8 cups of chicken broth or homemade broth!
  • 2 cups chicken diced
  • 1/2 cup uncooked rice
  • 1 lemon juiced
  • parsley optional

Instructions

  • Add some avocado oil to your Dutch Oven and place on the burner on medium/low heat
  • Add onion, carrots, and celery and sauté for 5 minutes
  • Add garlic and sauté for 1 more minute
  • Season with salt, pepper, thyme and red pepper flakes to your liking
  • Pour in broth and bring to a boil
  • Lower the pot to a simmer
  • Stir in the rice and chicken
  • Simmer for 20-25 minutes
  • Add juice from the lemon and few more cracks of salt and pepper
  • Serve hot with a side of yummy sourdough bread
