Chicken & Rice Soup
This Chicken & Rice Soup is a comforting, hearty dish perfect for warming up on a chilly day. Made with tender chicken, fresh vegetables like carrots, celery, and onions, and a hint of garlic, this soup is rich in flavor and packed with nutrients. Ingredients
- avocado oil
- 1 onion diced
- 3 medium carrots peeled and sliced
- 3 stalks of celery diced
- 4 cloves garlic minced
- 8 cups of chicken broth or homemade broth!
- 2 cups chicken diced
- 1/2 cup uncooked rice
- 1 lemon juiced
- parsley optional
Instructions
- Add some avocado oil to your Dutch Oven and place on the burner on medium/low heat
- Add onion, carrots, and celery and sauté for 5 minutes
- Add garlic and sauté for 1 more minute
- Season with salt, pepper, thyme and red pepper flakes to your liking
- Pour in broth and bring to a boil
- Lower the pot to a simmer
- Stir in the rice and chicken
- Simmer for 20-25 minutes
- Add juice from the lemon and few more cracks of salt and pepper
- Serve hot with a side of yummy sourdough bread
