Cauliflower Mac & Cheese

This Cauliflower Mac & Cheese is a wholesome twist on a classic comfort dish, combining the creamy richness you love with nutrient-dense ingredients. The sauce is made from boiled cauliflower and cashews blended with cheddar, parmesan, and seasonings for a velvety texture and flavorful depth. Mixed with chickpea pasta for added protein and topped with more cheese, this dish is baked to golden perfection. Ideal for a healthier take on mac and cheese, it’s a satisfying option that doesn’t skimp on taste.

Ingredients

  • 1/2 head cauliflower
  • 1 cup cashews
  • 1 cup cheddar cheese
  • 1 cup parmesan cheese
  • 12 oz noodles (I used chickpea pasta)
  • 2 tbsp olive oil
  • 1 tsp minced garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp red pepper flakes

Instructions

  • Preheat oven to 350 degrees.
  • Bring 2 pots of water to a boil.
  • Chop cauliflower into 2 inch pieces.
  • Once water is brought to a boil add both cauliflower and cashews into the same pot, boil till tender, about 8-10 minutes.
  • In the second pot, add your pasta of choice.
  • When cauliflower and cashews are done, drain and remember to save 1 cup of cooking liquid.
  • Place cauliflower, cashews, olive oil, 1/2 cup of cooking liquid, garlic, half of both cheeses, and seasonings into a blender and blend for 1 minute. If you need to add the additional 1/2 cup of cooking liquid please do so accordingly.
  • Grab a 8X8 pan and place cooked pasta and blended cauliflower cheese sauce into the pan and mix to have an even consistency.
  • Top with the remaining cheese.
  • Cover with tin foil and place into the oven for 30 minutes.
