Breakfast Burritos

These Breakfast Burritos are a hearty and convenient make-ahead meal perfect for busy mornings. Filled with sautéed potatoes, bell peppers, onions, bacon, and juicy tomatoes, these burritos are packed with savory goodness. Combined with fluffy scrambled eggs and melted organic cheddar cheese, they make for a satisfying, protein-rich breakfast. Simply wrap in tortillas, freeze, and reheat when needed for a quick, delicious start to your day.

Ingredients

  • 1 Bell Pepper
  • 1/4 Onion (chopped)
  • 1 Potato (diced)
  • 1 tsp Garlic (minced)
  • 1/2 cup Tomatoes (diced)
  • 6 Eggs (scrambled)
  • 1/4 cup Milk
  • 1 cup Bacon (chopped)
  • 6 Organic Tortillas
  • 2 cups Shredded Organic Cheddar Cheese

Instructions

  • Place pan on low/medium heat with 2 tablespoons of butter.
  • Add potatoes into the pan and sauté for 8 minutes.
  • Toss in onions, garlic, bell pepper, bacon, and tomatoes. Sauté till everything is tender.
  • Remove everything from the pan and place 2 tablespoons of butter into the pan to melt.
  • In a separate bowel scramble the eggs and milk together.
  • Pour into the hot pan and cook till done.
  • Place tortillas out onto the counter and evenly spread the hash mixture to each one along with spreading eggs evenly to each one as well.
  • Sprinkle each tortilla with cheese.
  • Roll up tortillas into a burrito and wrap with tinfoil.
  • Freeze and grab whenever you want!
  • Reheat by taking off the tin foil and warm in a microwave or oven!
  • Enjoy on the busy mornings!
