BLT Pasta Salad

This BLT Pasta Salad is a fresh and flavorful twist on the classic sandwich, perfect for picnics or casual meals. It combines crispy bacon, juicy cherry tomatoes, and chopped lettuce with tender rotini pasta, all tossed in a creamy avocado mayo and sour cream dressing infused with garlic and seasonings. With a touch of red pepper flakes for a hint of heat, this chilled salad offers a delightful mix of textures and flavors. It’s a refreshing, satisfying dish that’s easy to prepare and always a crowd-pleaser.

Ingredients

  • 2 cups of cooked diced bacon
  • 2 cups sliced cherry tomatoes
  • 8 oz of rotini pasta
  • 3 cups chopped lettuce
  • 1/2 cup avocado mayo
  • 1/4 cup sour cream
  • 1 tbsp minced garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp red pepper flakes

Instructions

  • Start boiling a pot of water on the stove to cook the noodles.
  • On a separate burner begin cooking the bacon.
  • While noodles and bacon are cooking mix together the mayo, sour cream, garlic, and seasonings. Set a side.
  • Next slice your cherry tomatoes.
  • Once bacon is cooked to the crispiness of your liking, chop it into bite size pieces.
  • Chop your lettuce.
  • Drain your noodles.
  • Combine noodles, bacon, cherry tomatoes, lettuce and your sauce into a large bowl.
  • Let chill in the fridge for 30 minutes.
  • Enjoy!
