Berry French Toast Bake
This Berry French Toast Bake is a delightful breakfast dish perfect for weekend mornings or special occasions. Cubes of sourdough bread are soaked in a mixture of milk, eggs, maple syrup, cinnamon, and tapioca flour for a rich, custardy base. After baking to golden perfection, it’s topped with a colorful mix of strawberries, blueberries, and raspberries, adding a burst of fresh, sweet flavor. Finished with a sprinkle of cinnamon and served with warm maple syrup, this bake is both comforting and indulgent, making for an irresistible morning treat.
Ingredients
- 6 slices of bread sourdough is best cut into 1 inch cubes
- 1 cup strawberries sliced
- 1/2 cup blueberries
- 1/2 cup raspberries
- 2 cups milk of your choice
- 3 eggs
- 1/2 pure maple syrup
- 2 tbsp cinnamon
- 2 tbsp tapioca flour
Instructions
- Preheat oven to 375 degrees
- Place 1 inch pieces of bread in a 9 X 13 dish
- Combine milk, tapioca flour, eggs, maple syrup, and cinnamon in a bowl
- Pour over the bread and let soak a minimum 30 minute or over night in the fridge
- Place into the oven for 30 minutes
- Sprinkle additional cinnamon and spread fruit on top
- Place BACK into the oven for an additional 20 minutes
- Serve with warm maple syrup
